Chicken Tortilla Soup

So, this is my first recipe post. Now, I will admit that I'm terrible at measuring when it comes to cooking (baking on the other hand, I follow those measurements exactly).

Ingredients:
2 Quarts of Chicken Stock (or broth)
3-4 Chicken Breasts (these will need to be shredded or chopped)
1 Onion
1 Red Bell Pepper
1 Green Bell Pepper
1 can of Black Beans
1 pk frozen corn
1 tomato
1/2 to 1 cup of Salsa (depending on your taste)
1/2 to 1 tablespoon fiesta lime Mrs. Dash seasoning (do this to taste). You can use taco seasoning instead, but taco seasoning will add extra salt to the soup.
Salt & Pepper to taste

Cook your chicken, you can either do it on the stove, but usually I roast it in the oven with some olive oil and strips of red and green bell peppers on top.

Dice/Chop you onions, peppers, and tomatoes to relatively the same size then saute them over low/medium heat until the peppers are soft and the onions translucent. Add the fiesta seasoning to the veggies and onion. Try to use as little oil as possible because it can make the soup oily (just skim the top of the soup if it seems oily).

Next add the chicken stock and salsa. Simmer for about ten minutes, or until warm. Then add the black beans (make sure you rinse them off first), corn, chicken, and tomatoes.

Bring to a very soft boil then turn down to a simmer.

Skim the top of the soup, if necessary, pour the soup into a bowl, and add some shredded cheese & crushed tortilla chips on top then ENJOY!
